TX Bar Organics Grass Fed Beef!
A few weeks ago, we received a package of the very best kind - a gift of organic grass fed beef! The package was from
TX Bar Organics, which is a small family business in Northern California. You can tell Travis Martinez and his family are passionate about what they do because their website is full of useful information about the science behind grass fed, organic and sustainable farming as well as recipes, rubs and marinades.
When the package arrived here is NW Georgia, which is a long way from Northern California, it was an unseasonably warm day and as luck would have it, we were not at home. I was a little nervous that the meat may have defrosted, but no worries! It was packaged very well in a strong insulated box with dry ice, and was still hard as a rock. Since we had never tried anything from them before, we decided to do a comparison between some grocery store beef and the beef from TX Bar Organics:
The difference was even more obvious than the picture shows...the grocery store meat was very pink while the beef from TX Bar Organics was crimson. The smell, the taste and the meaty texture were so obviously superior. We had some of the best hamburgers (bun-less of course) we've ever had. And we're really looking forward to trying out the steaks and roast! Hopefully, I'll be posting my recipe for corned beef later this week...if things go as planned.

One of the perks of my job is that I get to do reviews on new products. Some of you may
know that this girl loves beef, and nothing speaks to my heart more than grass-fed,
humanely raised beef. Luckily for me, TX Bar Organics sent me some of their beef to try out.
They Love Their Animals
TX Bar Organics sells 100% grass-fed, organic, Step 4 (pasture centered) beef that comes from cattle raised in Northern California. Their beef is third party verified that it’s humanely treated and never injected with growth hormones or antibiotics. What’s “Step 4″? Here’s a blog post they wrote on how exactly their cattle live. Basically, it means the cattle spend their whole lives happily eating grass in a pasture, but they may have had their testicles removed, and they may not have been on the same ranch their entire lives. As far as I’m concerned, I’d eat this meat any day.

In addition to their kindness to their animals, they also have a heart for humans. They started a program within their small business called Food For A Cause: for every 20 pounds of beef they sell, they give a pound of beef to a needy family. This company has my back.
I Love Their Meat
Which brings me to my review of their meat. They kindly sent me an entire box of steaks, roasts, and ground beef so I could have a taste. I thought it would be similar to the local beef I’ve been working my way through in my freezer – sort of dry and kind of gamey. But it was not those things. On the contrary, it was juicy, tender, and delicious. I made steak and eggs out of some top sirloin. I cooked the steak in a pan for 2 minutes on both sides on medium heat, then I stuck it in my convection oven for about 3 minutes total. Then I made a reduction sauce out of the meat drippings with some honey mead, balsamic vinegar, rosemary, salt, and pepper. I fried some pasture raised eggs and sautéed some bell peppers, cabbage, and kale in tallow. It was divine. Have a look.

Since we all purged our pantries last week, our kitchens might be looking at bit bare!

Now for a teaser! Here is one thing that I made with the meat that I have tried from TX Bar Organics, a simple top sirloin steak on top of grilled veggies – easy and delicious. This meat is so good that not a lot needs to be done to make the flavors come through. Another recipe I made with the beef kabob meat actually made it into my next cookbook, so you’ll have to wait anxiously for that one… In the meantime, enjoy!
Grilled Top Sirloin
Season both sides of your steak with a little salt and pepper. Grill the steak on a lightly oiled hot grill for 4-5 minutes on each side. Let the steak rest at least 5 minutes before you slice it! Serve on grilled veggies. No need for ANYTHING else!!
